- 3 large ripe bananas the riper, the better, brown spots preferred
- 2 eggs can be substituted with flax eggs for a vegan version
- 1 ½ cups self-rising flour or use all-purpose flour + 1 ½ tsp baking powder
- ½ cup sugar optional, depending on sweetness preference
Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Mash the bananas in a large mixing bowl until smooth.
Add the eggs and mix well.
Stir in the self-rising flour (and sugar, if using) until just combined. Avoid overmixing.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
