  • 2 medium ripe bananas mashed for best texture
  • 1 ½ cups all-purpose flour can substitute with gluten-free flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons sugar adjust to taste
  • 2 large eggs
  • ½ cup milk dairy or plant-based
  • 1 teaspoon vanilla extract optional
  • ¼ cup melted butter or substitute with oil for dairy-free

Instructions
 

  • Preheat your waffle iron to medium-high heat while you prepare the batter.
  • In a mixing bowl, mash the bananas with a fork or potato masher until smooth, leaving a few small chunks if desired.
  • In another bowl, whisk together the flour, baking powder, salt, and sugar.
  • Add the eggs, milk, melted butter, and vanilla extract to the mashed bananas, mixing until smooth and well combined.
  • Gradually pour the dry ingredients into the wet ingredients, stirring gently to combine. Be careful not to overmix; lumps are okay.
  • Pour the batter into the preheated waffle iron according to the manufacturer's instructions. Close the iron and cook for 3-5 minutes, or until golden brown and crisp on the outside.
  • Carefully remove the waffles from the iron, serve hot, and enjoy with your favorite toppings.
