- 6 oz Chorizo crumbled or diced
- 4 Eggs lightly beaten
- ½ cup Onion finely chopped
- 1 clove Garlic minced
- 1 tbsp Olive Oil optional
- Salt & Pepper to taste
- 2 tbsp Fresh Cilantro chopped (for garnish)
- 4 Tortillas optional, for serving
🔥 Heat a pan over medium heat and cook the chorizo until browned (5-7 minutes).
🧅 Add the onion and garlic to the pan, cooking until soft and fragrant.
🥄 Lower the heat and pour in the eggs. Stir gently to create soft, creamy scrambled eggs.
🧂 Season with salt and pepper to taste. Remove from heat just before the eggs are fully set.
🌿 Garnish with fresh cilantro and serve with warm tortillas or toast.
