Ingredients
  

  • 6 oz Chorizo crumbled or diced
  • 4 Eggs lightly beaten
  • ½ cup Onion finely chopped
  • 1 clove Garlic minced
  • 1 tbsp Olive Oil optional
  • Salt & Pepper to taste
  • 2 tbsp Fresh Cilantro chopped (for garnish)
  • 4 Tortillas optional, for serving

Instructions
 

  • 🔥 Heat a pan over medium heat and cook the chorizo until browned (5-7 minutes).
  • 🧅 Add the onion and garlic to the pan, cooking until soft and fragrant.
  • 🥄 Lower the heat and pour in the eggs. Stir gently to create soft, creamy scrambled eggs.
  • 🧂 Season with salt and pepper to taste. Remove from heat just before the eggs are fully set.
  • 🌿 Garnish with fresh cilantro and serve with warm tortillas or toast.
